Chocoholic (definition): a person who has or claims to have an addiction to chocolate.

If you have more than 2 secret stashes of chocolate candy, you might be a chocoholic. (Be honest.)

  • If your top 3 favorite candies all have chocolate in them, you might be a chocoholic.
  • If you have more than 4 books at home on chocolate, you might be a chocoholic.
  • If your favorite dessert is chocolate cake with chocolate frosting and chocolate ice-cream on the side, then you might be a chocoholic.
  • If you name chocolate as one of the seven wonders of the world, you might be a chocoholic.
  • If you bookmark more than 2 websites on the health benefits of chocolate, then you might be a chocoholic.
  • If your favorite movie is Charlie and the Chocolate Factory, you might be a chocoholic.
  • If you own more than one chocolate-related T-Shirt, you might be a chocoholic. (If you actually wear that chocolate T-Shirt in public, just admit it. You are a chocoholic.)
  • If you name your first-born child after your favorite chocolate candy - then you are a definite, full fledged chocoholic.

If you are a chocoholic, there you may want to try one of two possible cures:

Cure #1: Chocolate Overdose

In several cases a chocolate overdose will effectively kill your chocolate bug for a period of time. At some point, too much chocolate in a given month will cure your addiction - for at least a week. Your personal chocolate overdose limit will depend on your level of addiction. (We sell a variety of chocolates to help you do this in style.)

Cure #2: Chocolate Substitution

Chocolate substitution is another option, if the chocolate overdose doesn't work. It involves starving your chocolate bug by offering it wholesome candy substitutes. The concept is that your body will gradually forget its craving for chocolate.

If one of these cures doesn't work, well, at least you would enjoy the attempt . . .

By the way, there are some great links on the health benefits of chocolate in the Links section. You may want to bookmark them in case someone tries to convince you that chocolate is not good for you.

Well, of course it makes sense that chocolate really is healthy. Chocolate is made from a bean - and so, wouldn't that be like eating a vegetable? (Try explaining that to your mom.)

Where can I buy, or can you suggest a good recipe for, small, sweet, chewy almond cakes without chocolate?


My sister stopped at a roadside produce stand in Delaware last year on her way back from the beach and bought me a pack of small, chewy almond-flavored cakes (about the size of a cookie) without chocolate, but we cannot remember where she bought them. I'd like to just buy them, but I love them so much that I'd be willing to make them myself if you can find me a recipe. Thanks in advance!

SWEDISH ALMOND CAKE

1 1/4 c. sugar
1 egg
1 1/2 tsp. almond extract
2/3 c. milk
1 1/4 c. flour
1/2 tsp. baking powder
1 stick (8 tbsp.) butter, melted

Beat sugar, egg, almond extract and milk together. Add flour and baking powder. Then add butter. Spray baking dish with Pam or any non-stick coating. Bake at 350 degrees for 50 minutes or until cake tests done with toothpick. Cool for 20 minutes, then remove from pan.
When ready to serve sprinkle confectioners' sugar (through strainer) onto cake. Cut cake into 1/2 inch slices. Can be served warm or cold. Recipe can be doubled and bake in a Bundt pan. This is our family favorite cake. It's simple and delicious. I am asked for the recipe every time I serve it.

easy chocolate fondue recipe?


I want to make some chocolate fondue (the fondue restaurant isn't that great) and am looking for an easy recipe. There are lots on the internet so I'd like to know which is best from someone who has made fondue....

Double Chocolate Fondue

1/2 ounces milk chocolate, finely chopped
10 1/2 ounces semisweet chocolate, finely chopped
1 1/4 cups heavy cream
48 marshmallows

Chocolate and Coconut Cream Fondue

1 (15 ounce) can sweetened cream of coconut (such as Coco Lopez)
12 ounces bittersweet (not unsweetened) or semisweet chocolate, finely chopped
1/4 cup whipping cream
1/4 teaspoon coconut extract

Mean Chef's Chocolate Fondue

10 ounces bittersweet chocolate or semisweet chocolate, chopped into small pieces
1/2-3/4 cup milk or half-and-half or heavy cream (or 1/2 to 3/4 cup milk plus 2 tablespoons unsalted butter)
1/2 teaspoon vanilla extract

To make the sauce, in a small bowl, combine the chocolate and 1/2 cup milk or cream and melt gently in a barely simmering water bath or microwave on Medium (50 percent) power for about 2 minutes.
Stir until smooth.

Add more liquid if the sauce seems too thick or look curdled.
Remove from the heat and stir in the vanilla.

Use warm fondue immediately or set aside until needed and rewarm briefly.

Have forks, skewers, or pretty (or goofy) swizzle sticks available for guests to dip with.
If the fondue gets too thick or cool, reheat gently (without boiling) for 1 minute in the microwave on Medium (50percent) power or set in a pan of barely simmering water.

Leftover sauce keeps several days in the refrigerator.
It is a prefect topping for ice cream.

Note: This is a versatile recipe that can be tailored to your taste and the type of chocolate you are using.

For the most intense chocolate fondue, use milk, rather than half-and-half or cream, and omit the butter.

For even greater intensity, choose a bittersweet chocolate labeled anywhere from 66 percent to 70 percent and use the greater amount of liquid called for.

Butter or cream results in a softer, mellower chocolate flavor.

Ideas for dipping: Kumquats or segments of seedless clementines, oranges, or ruby grapefruit- If possible, separate the citrus into segments without breaking the membrane.

If you set the segments on a rack to dry in a warm place or in the oven, preheated to 200° F, then turned off for several hours, the membrane will dry like crisp paper and the juices will burst in your mouth when you take a bite.

Chunks of pineapple Chunks of fresh coconut or large curls of dried coconut Chunks of banana Dried fruit such as apricot, mango, papaya, pineapple, or Bing cherries Strips of good-quality candied orange, grapefruit or lemon peel

Cubes of pound cake or angel food cake, or toasted cubes of brioche or challah Cigarette cookies, fan wafers, graham crackers or digestive biscuits, or pretzels Marshmallows or meringues Toasted shaved almonds (to sprinkle on after dipping).

Ginger snaps vs. Ginger bread man...RUM BALLS, HELP!?


Every year I make gingerbread rum balls with spiced rum.
I have a great gingerbread cake/gingerbread man recipe I bake in thin layers and after cooling I break it up into a million peices and allow to air dry for a few days before crumbing up and putting this together.
But I NEED help this year.
Problem here is,
they are always too wet to power sugar them, so, last year I tried to make a spiced white chocolate that would harden enough to make a slight shell around them. What a mess and waste of money, ugly and way too sticky, didnt dry properly. But I do like the idea with the moist rum ball inside.The powered cinimon sugar just absorbs up the liquid and makes them, well, ugly and cakey.
But Damn, they taste sooo good!!!

Here is my real question, should I use a ginger snap this year, that should be a drier cookie, and will absorb more liquid and I should be able to dust them with the sugar.
Or should i take another shot at the spiced white chocolate shell??

try this one, they turned out really pretty- and the gingersnaps did seem to hold the balls together well:

Ginger Rum Balls with White Chocolate
1 cup white chocolate chips
3 tbsp light corn syrup
1/2 cup evaporated milk
1 tsp vanilla extract
1/4 tsp ground ginger
1/4 tsp cinnamon
1/8 tsp cloves
1/8 tsp nutmeg
1/2 cup powdered sugar
1 cup finely chopped nuts
2.5 cups gingersnap crumbs (about one 14-oz box)
1/2 cup granulated sugar, for rolling
PREPARATION:
1. Place the white chocolate in a large microwave-safe bowl and microwave until melted, stirring after every 45 seconds to prevent overheating.

2. Once the white chocolate is melted, add the corn syrup, evaporated milk, and vanilla extract.

If it seems to be separating, stir gently with a whisk until it comes back together. Stir in the gingersnap crumbs, powdered sugar, all the spices, and the chopped nuts. Place the mixture in the refrigerator until it is firm enough to shape, about 1 hour.

3. Using a teaspoon, roll the candy into small balls between your palms. Place the granulated sugar in a small bowl, and roll the balls in the sugar.

4. Place the gingerbread truffles in an airtight container and store them in the refrigerator. These candies store for several weeks, but they tend to lose some of their strong ginger flavor after about a week. Allow the truffles to come to room temperature before serving.
